Our Story (English)

Farmland, Kyoto, and a Single Private Room

Every day at Togiya starts with a conversation about the harvest — which farm has the best produce right now, which variety is at its peak. Our vegetable sommelier works directly with farms across Japan to select the very best, and that search is where our cooking begins.

Once we have great produce, we try not to overwork it. Gently steamed in a bamboo basket (seiro), vegetables become remarkably sweet and fragrant on their own. Our signature Seiro-Mushi steamed vegetable dish is the simplest expression of that idea: simplicity that lets the ingredient’s own strength come through.

Three Pillars

  • Ingredients — Seasonal vegetables chosen with a vegetable sommelier’s eye, sourced from farms nationwide and treated as the centerpiece of the meal, not a side dish.
  • Craft — Delicate Japanese technique alongside an authentic Chinese course from a chef with 20 years of hotel experience, including a seafood-forward course, a fiery mapo tofu, and our Kyoto white miso soy-milk motsu hot pot.
  • Space — A machiya-style room dressed with Nishijin-textile noren and characterful old doors. Fully private rooms, semi-private rooms, and sunken-table seating, so you can relax as if you were visiting a friend’s home.

For Everyone

Kyoto’s obanzai and shojin (Buddhist vegetarian) cooking traditions have long created satisfying meals without animal products. We draw on those techniques so vegan, vegetarian, allergy, and religious dietary needs can be accommodated — please let us know when you book. Availability varies by location.
